Instead of fleeing or trying to defend a city from siege the best thing to do is to travel around the perimeter of the city and kill all of the zombies that give chase. You want to do this for some time in order to clear out as many of them as you can. Then, over time, you want to go about taking the city back. Neighborhood by neighborhood, district by district. And if things prove too hot, return to the city circling method.
Basically you want to treat city's like a crow. Circle and strike only when things prove safe.
Remember to keep good numbers, ration supplies and send parties that meet up at different locations than your main force. Keep mobile and keep quiet so that zombies from neighboring areas don't become attracted to the noise.
Do this and apply supporting survival methods and you'll be resting back in your bed in no time. My research points out that a small city could be re-inhabited in just under a year's time. As opposed to dying defending your home, or never seeing it again. It also will allow you to salvage more supplies than raiding abandoned locations and searching for the bare minimum to survive.
Once you've taken a scrap of society back you must burn as much of the infection out of the city as you can. And try to deconstruct some of the city so you can use the broken down buildings to barricade what area you occupy. And be sure to fortify right away! Make your base into a castle that is designed for a coming military siege. Once this is done, scavenge, ration and settle in for the long haul. Because it's going to be a whole new world you're going to be living in.
